Overnight Oats

What do you give your child for breakfast before school?   Well, this overnight oatmeal could save your mornings. Now with the warm weather, hot oatmeal is not an option.  Oatmeal is tasty and with low-sugar, this could also be an alternative to a bowl of cereal or even that carb filled bagel. The ingredients are inexpensive when purchased in bulk and you can make multiple servings once for several days throughout the week. Try making this quick and easy recipe with your little one at night and have a reason to wake-up with energy in the morning.

Ingredients:

  • ½ cup old fashioned rolled oats
  • 1 cup Almond milk
  • 1 teaspoons honey
  • ¼ teaspoons vanilla extract
  • 1 teaspoons ground cinnamon (optional)
  • ½ teaspoon ground ginger (optional)
  • 1 teaspoons of chia seeds (optional)
  • ½ to 1 cup of chopped fruit
  • 8oz or 16oz mason jar with airtight seal or clip wrap

Instructions:

Mix all the dry ingredients first. First measure oats.

Measure out anywhere from 1 to 3 teaspoons of chia seeds. These little seeds are loaded with fiber, protein, Omega-3 fatty acids and various micronutrients. The serving size is 1 tablespoon (which equals 3 teaspoons) but if you already have a high-fiber diet, you should only add less than the serving sizes to your oatmeal.

Next, add cinnamon and ginger for flavor. If you do not like these spices, you could add a smaller amount of nutmeg or another spice you prefer.

You can combine all the wet ingredients in another bowl, or you can just pour them in individually to the mason jar starting with the Almond milk. Depending on the fruit you can choose from chocolate, vanilla, or regular almond milk. This recipe can use normal milk or even soy milk if you prefer other types of dairy.

The vanilla extract is another additional to have flavor.

Instead of processed sugar, we add nature\’s sugar from bees.

Add as much or as little amount fruit as you want, but make sure the mason jar can close or be sealed tightly.

For this one, I sliced a banana and added a 1/2 cup of blueberries.

You mix everything together with a spoon. This liquified mixture is normal.

Use the airtight top to seal the mason jar before putting it in the fridge. In this, I am showing you how you can also wrap the mason jar tightly with plastic wrap.

Overnight, the mixture thickens and the flavors all come together.
