Coconut Macaroon Nests

Coconut macaroons nests are the perfect spring cookie for your Easter party. This yummy cookie is simple and hands on for a fun activity to do with your little ones. You can add your favorite Easter candy on top of this cookie for your own added creativity. This recipe was pasted down from my grandmother and will be pasted to keep the Easter tradition going.

Egg Nest Macaroons:

Ingredients:

  • 1/3 cup butter, softened
  • 1 package (3 oz.) cream cheese, softened
  • 3/4 cup sugar
  • 1 egg yolk
  • 2 teaspoons almond (or vanilla extract)
  • 2 teaspoons orange juice
  • 1-1/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoons salt
  • 5 cups sweetened coconut flakes
  • 1 bag (8 oz.) Hershey kisses
  • 1 bag (8 oz.) pastel colored M&M or 1 bag (8 oz.) jelly beans

Directions:
Soften butter and cream cheese. Place sugar in bowl and beat together.

Add egg yolk.

Add almond/vanilla extract.
\"\"

Mix in the orange juice.
\"\"

In separate bowl, stir together flour, baking powder, and salt.
\"\"

Gradually, add flour mixture to butter mixture.

Mix until the mixture is smooth.
\"\"

Add 3 cups of shredded coconut.
\"\"

Mix until it is evenly distributed.
\"\"

Cover the bowl.
\"\"

Refrigerate for one hour or until it is firm enough to handle.

Heat oven to 350F. Shape dough into 1-inch balls.
\"\"

Use the remaining 2 cups of coconut to roll the dough balls in before placing them on a sheet pan.

Bake for 10 to 12 minutes. Remove from the oven; immediately press M&M and/or jelly beans on top of cookie.

Carefully, remove fro sheet pan to wire pan. Eat after they are cooled.
