Lil’ Iguana noticed a big zucchini in the garden today. He has a party coming up and wanted to use the fresh produce to bake something special that everyone can enjoy.
This easy vegan zucchini recipe is heart-healthy, dairy-free, and gluten free. Fill your home with a delicious aroma of this sweet dessert by following the recipe below.
- Coconut oil for greasing the pan
- 2 cups Almond Flour
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 cup oil
- 1/2 cup white sugar
- 2 eggs
- 1 cup shredded zucchini
- 1/2 cup chopped pecans (optional)
- 1/2 cup chocolate chips (optional)
- 1/4 cup dried currants (optional)
Directions:
First, use either a non-sick loaf pan or light grease your pan. Preheat the oven to 325F.
In medium bowl, combine dry ingredients: almond flour, salt, baking soda, baking powder, and cinnamon.
In small small bowl, combine wet ingredients: oil, vanilla, sugar, and eggs.
Combine wet and dry ingredients.
Fold in shredded zucchini, pecans, and additional mix-ins.
We are adding chocolate chips to this recipe, which will not make it dairy-free.
Scoop batter into pan.
Bake for 40 to 60 minutes or until toothpick comes out clean.
Let rest for at least 20 minutes before serving.
